If you\u2019ve ever been to a bar, you know the atmosphere is as important as the drinks. Shingo Gokan has always known this to be true. Gokan is an internationally acclaimed barman and entrepreneur. He launched his bar company, SG Group, in 2014 and in the same year opened Speak Low, his first bar in Shanghai. In a little over a decade, Gokan has expanded his business to Shanghai, Okinawa, New York, Hong Kong and Madrid besides his home turf of Tokyo.<\/p>\n\n\n\n
Gokan says he\u2019s mainly interested in two things: elevating the bar experience for his customers, and bringing the best of Japan to an overseas audience. \u201cIn the decade since setting up my company, I\u2019ve traveled to a lot of different countries and decided that when I do business overseas, I want to leave a mark of Japan. Something that\u2019s recognizable as Japanese, whether it\u2019s the way I conduct business or the drinks that are served, or the bar experience as a whole,\u201d he says.<\/p>\n\n\n\n
A native of Kanagawa Prefecture, Gokan had little to do with English or life abroad, and he says that in school \u201cmy English grades were dismal. I just couldn\u2019t get interested in the language, mainly because there were no opportunities to use it.\u201d He became a bartender in 2001 in Kawasaki and later moved to New York City, where he eventually became head bartender and director at Angel\u2019s Share, the legendary establishment first opened by Tony Yoshida in 1993.<\/p>\n\n\n\n
\u201cAfter I got to New York, I still couldn\u2019t speak English that well, even though I attended a language school. So I concentrated on work, and learned as I went along.\u201d Angel\u2019s Share is famed for its craft cocktails, which draw from Japan\u2019s own traditional liquors. \u201cThere were a lot of Japanese on the staff and I could ask for help when I didn\u2019t understand the orders. I mistook Chartreuse for shochu, and bourbon and coke for Barbancourt rum. When that happened, I apologized and remade the orders. Eventually there were no more mistakes.\u201d<\/p>\n\n\n\n
As Gokan settled into life in New York, he started noticing the elements that went into creating and managing a successful bar. \u201cEverything interested me, from the typeface on the menus to the design of the shop logo, not to mention the interior layout, the lighting, etc. Even walking around town gave me a ton of ideas.\u201d<\/p>\n\n\n\n
Gokan adds that bartending isn\u2019t just about making and serving cocktails. \u201cIt extends to many other areas of life, because the customers are from all walks of life. This realization came to me as soon as I made plans to open my own bar. There\u2019s a lot to learn and study. The studying never ends, which is what makes my work so interesting.\u201d<\/p>\n\n\n\n
He says that his own ideal bar is a close approximation to the one he recently opened in Shibuya called Sangai. \u201cIt seats only eight people and the intimacy level is very high. Otherwise, I would love to open a Japan-themed bar in Kyoto, which is one of my favorite cities.\u201d<\/p>\n\n\n\n
Gokan sums up: \u201cA good bar must offer something more intangible and mystical than alcohol. The time, the space and the whole experience must be special in that particular moment for the customer. I hope my customers encounter that moment, bask in it and find it valuable.\u201d<\/p>\n<\/div><\/div>\n\n\n\n
